- ½ cup water (to mix with seasoning)
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- 1 cup frozen corn (optional)
- 1 cup black beans, drained and rinsed (optional)
For the Casserole:
- 2 cups shredded cheddar or Mexican cheese blend
- 1 bag (32 oz) frozen tater tots
- ½ cup diced tomatoes (optional, for garnish)
- ¼ cup chopped green onions (optional, for garnish)
- ¼ cup sour cream (for serving)
Instructions
Step 1: Prepare the Meat Mixture
- Preheat the Oven: Set oven to 375°F (190°C).
- Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Season the Meat: Stir in taco seasoning and water, mixing well. Simmer for 2-3 minutes until thickened.
- Add Cream Soup: Stir in the cream of mushroom (or chicken) soup until well combined.
- Mix in Corn and Beans (Optional): If using, add frozen corn and black beans.
Step 2: Assemble the Casserole
- Layer the Meat: Spread the beef mixture evenly in a 9×13-inch greased baking dish.
- Add Cheese: Sprinkle 1 cup of shredded cheese over the meat mixture.
- Arrange the Tater Tots: Place tater tots in a single layer on top of the cheese.
Step 3: Bake the Casserole
- Bake Uncovered: Place the dish in the preheated oven and bake for 25-30 minutes, or until the tater tots are crispy and golden brown.
- Add More Cheese: Sprinkle the remaining 1 cup of cheese over the tater tots and bake for an additional 5 minutes, or until the cheese is melted.
Step 4: Serve & Garnish
- Garnish (Optional): Top with diced tomatoes, chopped green onions, and a drizzle of sour cream.
- Serve Hot: Enjoy with your favorite sides like salsa, guacamole, or a fresh salad.
Notes
- Prevent Soggy Tots: Drain the ground beef well and avoid adding too much liquid.
- Make It Spicier: Add diced jalapeños or use a hot taco seasoning blend.
- Make It Healthier: Use ground turkey, low-fat cheese, and reduced-fat cream soup.
- Vegetarian Version: Replace meat with crumbled tofu or extra beans.
- Storage & Reheating: Store leftovers in the fridge for up to 3 days. Reheat in the oven at 350°F for 15 minutes to keep the tots crispy.
