Instructions
Step 1: Prepare the Ingredients
- Heat olive oil or butter in a large pot or Dutch oven over medium heat.
- Add chopped onions and sauté for 2-3 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
Step 2: Cook the Sausage
- Add sliced smoked sausage to the pot and cook for 5-7 minutes, stirring occasionally until browned.
Step 3: Build the Soup
- Pour in the chicken broth and scrape the bottom of the pot to deglaze.
- Add the drained beans, diced tomatoes (if using), salt, pepper, smoked paprika, and cayenne pepper. Stir well.
