Description

Pineapple Casserole is a unique Southern dish that perfectly blends sweet and savory flavors. This classic recipe combines juicy pineapple, sharp cheddar cheese, and a buttery Ritz cracker topping for a delightful side dish or dessert. Ideal for holiday gatherings, potlucks, or family dinners, this easy-to-make dish adds a deliciously unexpected twist to any meal.

Ingredients

Scale

For the Casserole:

  • 2 cans (20 oz each) pineapple chunks, drained (reserve ¼ cup juice)
  • 1 cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • 1 sleeve (about 30) Ritz crackers, crushed
  • ½ cup unsalted butter, melted

Instructions

Step 1: Prepare the Casserole Base

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained pineapple chunks, granulated sugar, flour, and reserved pineapple juice. Mix well.
  3. Stir in the shredded cheddar cheese and transfer the mixture to a greased 9×13-inch baking dish.

Step 2: Make the Buttery Topping

  1. In a separate bowl, combine the crushed Ritz crackers with the melted butter. Stir until the crackers are evenly coated.
  2. Sprinkle the cracker mixture evenly over the top of the pineapple mixture.

Step 3: Bake & Serve

  1. Bake uncovered for 25-30 minutes, or until the topping is golden brown and bubbly.
  2. Remove from the oven and let it rest for 5 minutes before serving.

Notes

  • For a crunchier topping, broil the casserole for 1-2 minutes at the end of baking.
  • Balance the sweetness by using less sugar or opting for unsweetened pineapple.
  • Gluten-Free Option: Use gluten-free crackers and replace all-purpose flour with cornstarch.
  • Add a nutty twist by mixing in chopped pecans or walnuts into the cracker topping.
  • Serving Suggestion: Pairs perfectly with baked ham, roasted turkey, or fried chicken.
