Ingredients

Scale

For the Chicken & Sauce:

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 cup chicken broth
  • 1 block (8 oz) cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Pasta:

  • 12 oz spaghetti, uncooked

Optional Add-Ins:

  • ½ cup chopped bell peppers
  • ½ cup sliced mushrooms
  • ½ teaspoon red pepper flakes (for spice)
  • ¼ cup grated Parmesan cheese (for garnish)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

Step 1: Cook the Chicken & Sauce

  1. Place the chicken breasts in the crockpot and season with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Pour in the cream of chicken soup, Rotel tomatoes, and chicken broth. Stir gently to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked and tender.

Step 2: Shred the Chicken

  1. Once the chicken is cooked, remove it from the crockpot and shred it using two forks.
  2. Return the shredded chicken to the crockpot and stir to combine with the sauce.

Step 3: Add Cheese & Pasta

  1. Cut the softened cream cheese into small pieces and add it to the crockpot along with shredded cheddar cheese. Stir until well combined.
  2. Break the spaghetti into halves or thirds and add it to the crockpot. Stir to coat the pasta in the sauce.
  3. Cover and cook on high for 30-40 minutes, stirring occasionally, until the pasta is tender.

Step 4: Final Touches & Serving

  1. Stir well to ensure everything is evenly mixed and coated in the creamy sauce.
  2. Garnish with grated Parmesan cheese and fresh parsley before serving.
  3. Serve hot with garlic bread or a fresh salad for a complete meal. Enjoy!

Notes

  • Prevent Overcooked Pasta: Add the pasta towards the end to keep it from turning mushy.
  • Make It Spicier: Add red pepper flakes or use hot Rotel tomatoes for extra heat.
  • Substitutions: Use whole wheat or gluten-free pasta for a healthier option.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
  • Reheating: Add a splash of chicken broth or milk when reheating to maintain creaminess.
