This Banana Bread Recipe with Oil is the ultimate way to achieve a moist, tender, and flavorful loaf that stays fresh for days. Swapping butter for oil ensures a soft and rich texture, while ripe bananas bring natural sweetness. Perfect for breakfast, a snack, or dessert, this easy-to-make recipe will quickly become a family favorite!

Ingredients

Scale

Wet Ingredients:

  • 3 ripe bananas (mashed, about 1 cup)
  • ½ cup vegetable oil (or canola oil)
  • ¾ cup granulated sugar (or brown sugar for a richer taste)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)

Optional Add-Ins:

  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips
  • ¼ cup shredded coconut

Instructions

Step 1: Preheat & Prepare

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix Wet Ingredients

  1. In a large bowl, mash the bananas until smooth.
  2. Add oil, sugar, eggs, and vanilla extract, whisking until combined.

Step 3: Combine Dry Ingredients

  1. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

Step 4: Mix & Add Extras

  1. Gradually fold the dry ingredients into the wet mixture, stirring gently.
  2. If using, fold in nuts, chocolate chips, or shredded coconut.

Step 5: Bake the Banana Bread

  1. Pour the batter into the prepared loaf pan.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use Overripe Bananas: The riper the bananas (with brown spots), the better the flavor and moisture.
  • Don’t Overmix: Stir the batter until just combined to keep the bread soft.
  • Enhance Flavor: Add a teaspoon of nutmeg or a pinch of ginger for warmth.
  • Storage: Keep at room temperature for 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
